Thai salad
Very basic, once again.
cucumber, deseeded, fairly sizable chunks.
red bell pepper, chunks.
carrot, grated
unsalted cashew nuts (about a cup if you use a full cucumber, single bell pepper and single carrot).
finely diced garlic cloves
finely diced red chili pepper
tbsp lime juice, fresh
half to full tbsp rice vinegar
2 to 2.5 tbsp soy sauce (alternatively, 1 tbsp soy, 1 tbsp fish sauce)
white pepper
good amount of coriander leaver
good amount of (Thai) basil
Mix cucumber, red bell pepper, carrot and cashews in a bowl. Make a dressing of the lime juice, rice vinegar, soy/fish sauce, white pepper, garlic, red pepper.
Mix. Add coriander and basil. Serve.
